- 1/2 Pineapple cut into 3 inch pieces
- 6 Chicken Thighs cut into 2 inch pieces
- 10 Mushrooms
- 2 Zucchini cut into 3 inch pieces
- 1/2 Red Onion
- 1 Cup Teriyaki Sauce
Oven Method
Preheat your oven to 400F and prepare a baking tray with parchment lined paper.
Soak your skewers in cold water and set aside.
In a bowl, add your chicken and 1/2 cup of teriyaki sauce, and make sure that the chicken is fully covered in the sauce.
Take a skewer and put all chicken, veggies, and fruit (in no particular order).
Once everything is on skewers, generously brush each skewer with the 1/2 cup of teriyaki sauce you have left and place them on a baking sheet.
Bake for 25-35 minutes or until the chicken thighs are fully cooked and reach an internal temperature of 165F.
Serve on a bed of hot white rice and enjoy!
