Spicy Adobo Chicken

Ingredients
  

  • 5 Chicken Thighs optional with skin and bone
  • 1/4 Cup Light Soy Sauce
  • 2 Tbsp Dark Soy Sauce
  • 3 Tbsp Vinegar
  • 2 Bay Leaves
  • 4-5 Cloves Garlic diced
  • 1/2 Medium Sweet Onion diced
  • 1/2 tsp Ground Black Pepper
  • 2 Red Thai Chillies diced
  • 1 Tsp Brown Sugar
  • 2 Tbsp Oil
  • 2 Cups Water

Instructions
 

  • In a sauce pot on medium-high heat, add in your oil and let heat.
  • Once your oil is hot, place your chicken in so it can brown up. Flip once.
  • Next, add in all the rest of your ingredients - light soy, dark soy, vinegar, bay leaves, garlic, onion, pepper, red Thai chillies, brown sugar, and water.
  • Cover with a lid and stir occasionally and let simmer on the stove for 45 minutes. At this point, you may turn the stove down to medium heat as well.
  • After 40 minutes, your sauce should thicken and your chicken be tender. Don't be afraid to leave it on the stove if you want the chicken to fall off the bone!
  • Serve on a bed of hot white rice and enjoy!
