3 Ripe Brown Bananas mashed 1/2 Cup Unsalted Butter melted 1 tsp Vanilla Extract 2 Eggs 1 Cup White Sugar 1 tsp Baking Soda 1/4 tsp Salt 2 Cups All Purpose Flour 1 tsp Cinnamon 1 tsp Nutmeg 1/2 Cup Pumpkin Puree Topping (Optional) 3 Tbsp Brown Sugar 1 slice on top of each muffin 1/2 Banana 1 slice on top of each muffin
Preheat your oven to 350F and add muffin liners to your muffin tin OR generously grease the muffin tin.
In a large bowl, add in your mashed bananas, eggs, vanilla extract, melted butter, and white sugar. Mix until well combined.
Next, add in your salt, cinnamon, nutmeg, baking soda and pumpkin puree. Mix until well combined.
Slowly add in your flour 1/2 cup at a time and mix until everything is well incorporated.
Scoop your batter evenly between all 12 muffin tins. Optional, add a banana slice on top of each muffin and sprinkle brown sugar on top.
Bake the muffins in the oven for 20-25 minutes or until the muffins are fully cooked through.
