Ingredients

Peppermint Brownies

  • 1/2 Cup Unsalted Butter melted
  • 1/2 Cup Brown Sugar
  • 1/2 Cup White Sugar
  • 2 Eggs
  • 1 tsp Vanilla Extract
  • 2 tsp Peppermint Extract
  • 1/2 Cup Flour
  • 1/2 Cup Cocoa Powder
  • 1/4 tsp Baking Powder
  • 1/4 Cup Chocolate Chips/Chunks

Candy Cane Cream Cheese Frosting

  • 1 Block Cream Cheese
  • 1/4 Cup Icing Sugar
  • 1/2 Cup Crushed Candy Canes
  • 1 tsp Vanilla Extract
  • 1/2 tsp Peppermint Extract

Instructions

  • Preheat your oven to 350F and line a square 9x9" baking pan with parchment paper.
  • In a large bowl, add in your melted butter, brown and white sugar, eggs, and vanilla and peppermint extract fully mix well together.
  • Next add in your flour, cocoa powder, baking powder and mix again.
  • Once all ingredients are fully combined, add in your chocolate chips/chunks and fold it slowly so it's even distributed in the batter.
  • Pour brownie batter into the square baking pan and make sure to spread the layer evenly to each corner so it will bake evenly .
  • Bake in the oven for 20 to 30 minutes or until the middle is fully cooked. You can test it by poking the middle with a toothpick or small knife and seeing the knife come out clean.
  • While you're waiting for the brownies to bake, you can start on your cream cheese frosting by combining all the ingredients in a bowl and mixing everything together. Fold in the candy canes last as the colour of the candy canes will come off in the frosting. Let frosting chill in the fridge!
  • Once your brownies are done, let cool for 30 minutes - 1 hour then frost the tops of the brownies. Optional: Add a little more crushed candy canes on top.
  • Serve and enjoy!
