Blackberry Lemon Loaf

Ingredients
  

  • 1 1/2 Cup All Purpose Flour
  • 2 Large Eggs
  • 1/2 Cup Unsalted Butter melted
  • 1/4 tsp Salt
  • 1/4 tsp Baking Powder
  • 3/4 Cup White Sugar
  • 2/3 Cup 2% Milk
  • 1 Package Instant Jell-O Lemon Pudding Mix 99g
  • 1 Cup Blackberries some smashed, some whole! leave some a few to add to top of loaf before baking

Instructions
 

  • Preheat your oven to 350F and prepare a greased (oil or butter) loaf pan.
  • In a large mixing bowl, add your sugar, eggs, and butter and mix well together.
  • Next, add in your milk, lemon pudding mix, baking powder, and salt and mix together again.
  • Lastly, slowly add in your flour and fold the batter then add in your smashed and whole blackberries to fold in one last time. Pour into your loaf pan and add a few remaining blackberries on top.
  • Once everything is mixed well and there are no clumps of flour, bake in the oven for 1 hour to 1 hour and 15 minutes minutes or until when you poke a toothpick in the middle of the loaf, it comes out clean!
  • Let cool, serve, and enjoy!
