So, you can cook your skewers however you’d like! I either do mine on the grill or in the oven. More days than less are in the oven. Aside from that, the actual equipment you need is a cutting board, knife, and bamboo wood skewers!
CAN I SUBSTITUTE/ADD ANYTHING OUT?
You sure can substitute or add anything! My favorite meat to use for these teriyaki skewers is chicken thighs however, you can use chicken breast, beef, pork, or tofu for these!
I usually use the vegetables that are most likely found in teriyaki chicken dishes but you can use anything you have at home or that you prefer! Some other great vegetable additions are bell peppers, broccoli, carrots, tomatoes, corn, etc!
Homemade teriyaki sauce is always the best but when time is tight, store-bought is a lifesaver! Although this recipe for specifically for teriyaki skewers, you can use other sauces like curry, Korean BBQ, garlic lemon, peanut and so much more!

HOW LONG DOES IT KEEP FOR?
These chicken skewers keep in the fridge for about 2 days. If you’re using the grill, I find BBQ’d food isn’t that great after 2 days. If you’re using the oven, you can definitely store it for up to 4 days. Be sure that you let the skewers fully cool then store them in the fridge in an airtight container. You can meal prep this recipe as well and pack it with some white rice, roast potatoes, or a salad!

Ingredients
- 1/2 Pineapple cut into 3 inch pieces
- 6 Chicken Thighs cut into 2 inch pieces
- 10 Mushrooms
- 2 Zucchini cut into 3 inch pieces
- 1/2 Red Onion
- 1 Cup Teriyaki Sauce
Instructions
Oven Method
- Preheat your oven to 400F and prepare a baking tray with parchment lined paper.
- Soak your skewers in cold water and set aside.
- In a bowl, add your chicken and 1/2 cup of teriyaki sauce, and make sure that the chicken is fully covered in the sauce.
- Take a skewer and put all chicken, veggies, and fruit (in no particular order).
- Once everything is on skewers, generously brush each skewer with the 1/2 cup of teriyaki sauce you have left and place them on a baking sheet.
- Bake for 25-35 minutes or until the chicken thighs are fully cooked and reach an internal temperature of 165F.
- Serve on a bed of hot white rice and enjoy!
