You sure can add or substitute anything you’d like to this salad recipe! Crunchy and harder vegetables are good for this recipe such as diced tomatoes (without the seeds), bell peppers, jalapenos, carrots, edamame beans, raw cabbage and so much more.
You can also add in some protein like chicken or tofu to bulk it up as well or even some nuts for more crunch. If you make this as a salad, another great addition would be to top it off with some wonton chips! YUM!
You can also omit the chilli oil if you prefer the sauce to be not spicy but it is so dang good with a bit of a kick! The sesame oil is really the star of the show and what makes this dish so delicious.

HOW LONG DOES IT KEEP FOR?
If you make a bigger batch of this spicy Asian cucumber salad, I recommend keeping this in the fridge for no longer than 2 days. I find that within 2 days, the cucumber is still really crunchy and keeps its shape but after that, the cucumber starts to pull out more moisture and become not as crunchy. Be sure to store it in an airtight container!
INSPIRATIONS FOR THIS RECIPE?
The inspiration for this recipe comes from All You Can Eat Japanese Restaurants! My husband and I love treating ourselves to a sushi/Japanese food buffet and I found that cucumber salads are getting more popular there! I always order this and love it every time! It is an extremely refreshing and crunch-satisfying meal.
I also saw on social media, though I have not tried it yet that Din Tai Fung is a popular dim sum restaurant chain in the USA that makes a cucumber salad that everyone loves so I’ve been seeing lots of variations of cucumber salad recipes online!

- 2 Cloves Garlic minced
- 1 Tbsp Sesame Oil
- 2 Tsp Rice Vinegar
- 1 Tbsp Soy Sauce
- 1 Tbsp Chilli Oil
- 1 Tsp Sesame Seeds
- 1 Tsp Brown Sugar optional
