You can find the ingredients to make Spicy Adobo Chicken at your local grocery store or market. This recipe is so great as all you’ll really need is one pot! I guess it’s a one pot recipe haha. Aside from that, you’ll just need some basic kitchen equipment like a cooking spoon, cutting board, knife and measuring cups/spoons.

CAN I SUBSTITUTE/ADD ANYTHING OUT?
You sure can! Adobo is so great because it is so easy and comforting. This recipe is excellent without being spicy as well. All you’ll need to do is remove the Thai red chilli peppers and it’s amazing as is!
Adobo works well with so many different meats and veggies too! I have Tofu Adobo that I enjoy making as well! It always hits the spot when I don’t want to have meat for dinner/meal prep. You can use beef, pork and even seafood if you wanted to!
Aside from this, I really want to emphasize that even Filipino makes their adobo differently and it’s all about your taste buds! Alter the measurements if you need to and if you feel like this recipe might be too salty for you, feel free to add some water to make it less salty! I love salty and vinegary adobo because white rice just goes so perfect with it.
You are also welcome to add any seasonings or spices you’d like! This recipe is pretty simple in itself but onion powder, garlic powder, parsley flakes would all be great additions that won’t alter the flavour!

I find with any adobo as well, the day(s) after is honestly even better! I feel like the soy sauce and vinegar get to marinate the chicken more and it’s one of those dishes that truly gets better with age! You can also freeze it if you make a big batch and want to enjoy it at a later date! Just cook some fresh white rice and heat this up and you’ve got an extremely satisfying and comforting dish!
INSPIRATIONS FOR THIS RECIPE?
My mom is a fantastic cook and growing up although I love to cook, I really didn’t have the opportunity to because my mom honestly kept the fridge full at all times! When I first moved out from home and moved in with my then boyfriend now husband, I started to be more comfortable in the kitchen and since we are both Filipino, I knew that I wanted to keep our culture and learn how to make delicious Filipino recipes!
I cook a lot of Filipino dishes now and am excited to share more of what I cook on my blog! I love anything spicy and knew this spicy chicken adobo needed to be a recipe on here!
ANY OTHER NOTES?
Again, this dish is on the salty side so if you’re unsure about the saltiness, please feel free to lessen the soy sauce or add some more water and make it saucier and less salty!
Spicy Adobo Chicken
Ingredients
- 5 Chicken Thighs optional with skin and bone
- 1/4 Cup Light Soy Sauce
- 2 Tbsp Dark Soy Sauce
- 3 Tbsp Vinegar
- 2 Bay Leaves
- 4-5 Cloves Garlic diced
- 1/2 Medium Sweet Onion diced
- 1/2 tsp Ground Black Pepper
- 2 Red Thai Chillies diced
- 1 Tsp Brown Sugar
- 2 Tbsp Oil
- 2 Cups Water
Instructions
- In a sauce pot on medium-high heat, add in your oil and let heat.
- Once your oil is hot, place your chicken in so it can brown up. Flip once.
- Next, add in all the rest of your ingredients – light soy, dark soy, vinegar, bay leaves, garlic, onion, pepper, red Thai chillies, brown sugar, and water.
- Cover with a lid and stir occasionally and let simmer on the stove for 45 minutes. At this point, you may turn the stove down to medium heat as well.
- After 40 minutes, your sauce should thicken and your chicken be tender. Don't be afraid to leave it on the stove if you want the chicken to fall off the bone!
- Serve on a bed of hot white rice and enjoy!
