If you’re already an avid baker, you most likely have all your baking equipment at home! You’ll need all the standard baking equipment such as some mixing bowls, baking tray, spatulas or spoons and some kind of electric mixer. I also highly recommend a cookie scoop! They are so great to portion out cookie sizes so that they are all the same size. I switch back and fourth with an electric hand mixer and my KitchenAid!

CAN I SUBSTITUTE/ADD ANYTHING OUT?
Honestly, I have perfected this pumpkin spice cookie recipe to my liking however, you can of course, alter the recipe to delight you own tastebuds! Some additions or substitution ideas include but are not limited to:
- Using white or dark chocolate instead of milk chocolate chips
- Add in some chopped nuts like almonds, pecans, walnuts, pistachios
- Sprinkle some flaky sea salt on top after baking
- Add in some caramel on top
- Add a cream cheese frosting on top
If you love the texture of the cookie, you can omit the pumpkin puree, pumpkin spice, mini marshmallows and graham crackers and just bake these as chocolate chip cookies!

HOW LONG DOES IT KEEP FOR?
Pumpkin Smores Cookies can last for about 3 to 5 days when stored in an airtight container at room temperature. For longer storage, you can refrigerate them for up to a week or freeze them for up to 2 months. Just make sure to seal them well to maintain freshness and prevent them from drying out.
You can also create the the cookie dough balls to freeze then just bake them fresh whenever you’re needing a fresh cookie! Keep some mini marshmallows on hand to freshly melt some on top a few minutes before they are done baking!
INSPIRATIONS FOR THIS RECIPE?
A few years back, I watched Halloweentown and I remember the scene where the youngest sibling, Sophie, wanted a chocolate chip cookie before dinner. She didn’t know she had witch powers yet so when her mom told her that she had to eat dinner before having a cookie, she was upset and kept repeating how much she wanted the cookie! The cookie then began to levitate towards her and her mom saw it and took the cookie before it reached Sophia.
With the whole theme of Halloweentown, I imagined that the chocolate chip cookie would be pumpkin spice chocolate chip cookies which is what I created and shared! This year, I was thinking of what kind of cookies I wanted to make and thought of smores and pumpkin spice together and they turned out amazing! Since I’ve baked these cookies, I’m not going to lie, I’ve had one every day for breakfast.
ANY OTHER NOTES?
Yes! So, when you bake these cookies, the marshmallows will melt and turn into a crunchy sugar. About 2 minutes before the bake time is done, pull your cookies out of the oven and place a few mini marshmallows on top. Place back in the oven for them to melt so the marshmallows are still visible on top!
Pumpkin Smores Cookies
Ingredients
- 2 Cups All-Purpose Flour
- 1 Cup Packed Brown Sugar
- 2 Eggs
- 1/4 Cup White Sugar
- 1/2 Cup Salted Butter melted
- 1/2 tsp Baking Soda
- 1 Cup Milk Chocolate Chips
- 1 tsp Vanilla Extract
- 1 1/2 tsp Pumpkin Spice
- 1/4 Cup Pumpkin Puree
- 1/2 Cup Graham Crackers crushed
- 1 Cup Mini Marshmallows
Instructions
- Preheat your oven to 350F and line a baking sheet with parchment paper.
- In a large mixing bowl, add in your melted butter, brown and white sugar, pumpkin puree, vanilla extract and eggs. Whisk together until well combined.
- Next add in your baking soda, flour and pumpkin spice and combine everything together.
- Lastly, fold in your chocolate chips, mini marshmallows, and graham crackers but be careful not to overmix!
- Scoop out cookie dough into even 2 inch balls, spaced 2 inches apart and place on the cookie tray. The cookie dough balls do not need to be perfect!
- Bake for 15-17 minutes or until golden brown then remove from oven and place a couple of mini marshmallows on top.
- Place in the oven to bake for another 2 minutes.
- Transfer to a cooling tray, cool, serve and enjoy!
