INSPIRATIONS FOR THIS RECIPE?
Fall is my most favourite season and it’s truly the time where I feel most alive and thrive! I want to feel all the cozy that I can feel and warm delicious banana bread does that for me! Truly nothing reminds me of a homey feeling more than a yummy banana bread fresh out of the oven.
I wanted to combine my fav Fall flavour like pumpkin spice and combine it in my banana bread recipe and it truly did not disappoint! The pumpkin puree made the muffin so soft and every bite feels like Fall. I will be making these every year for as long as I can!
ANY OTHER NOTES?
Yes! I sliced a regular yellow banana and placed one on top with a sprinkle of brown sugar and it was perfect however, this is optional! No topping is needed for these!
Pumpkin Banana Bread Muffins
Ingredients
- 3 Ripe Brown Bananas mashed
- 1/2 Cup Unsalted Butter melted
- 1 tsp Vanilla Extract
- 2 Eggs
- 1 Cup White Sugar
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 2 Cups All Purpose Flour
- 1 tsp Cinnamon
- 1 tsp Nutmeg
- 1/2 Cup Pumpkin Puree
Topping (Optional)
- 3 Tbsp Brown Sugar 1 slice on top of each muffin
- 1/2 Banana 1 slice on top of each muffin
Instructions
- Preheat your oven to 350F and add muffin liners to your muffin tin OR generously grease the muffin tin.
- In a large bowl, add in your mashed bananas, eggs, vanilla extract, melted butter, and white sugar. Mix until well combined.
- Next, add in your salt, cinnamon, nutmeg, baking soda and pumpkin puree. Mix until well combined.
- Slowly add in your flour 1/2 cup at a time and mix until everything is well incorporated.
- Scoop your batter evenly between all 12 muffin tins. Optional, add a banana slice on top of each muffin and sprinkle brown sugar on top.
- Bake the muffins in the oven for 20-25 minutes or until the muffins are fully cooked through.
- Cool, serve and enjoy!
