- Unsalted Butter
- Egg
- Brown Sugar
- White Sugar
- Jell-O’s Pistachio Pudding Mix
- Baking Soda
- Salt
- Vanilla Extract
- Flour
- Crushed Pistachios (optional)
WHAT EQUIPMENT DO I NEED?
If you love baking or have ever made cookies before you should already have everything you need! If you’re a new baker and don’t have everything you need, you can purchase some things that will last you a long time! You’ll want some mixing bowls, measuring cups/spoons, cookie dough scoops, baking trays and an electric mixer! Personally, you can delay purchasing a cookie scoop and electric mixer if you wanted to do things by hand but it does make life easier!

I’m going to straight up admit right here that I’m not the best baker so I wouldn’t be able to really recommend what substitutions you could make that would keep the cookie recipe still taste great but there are tons of recommendations that you can Google for swaps! I pretty much use this base cookie recipe a lot so I trust it!
What you can do is add some things to these cookies! Some additions you can make are:
- Add chopped nuts like almonds, walnuts, pistachios or seeds etc
- Add some chocolate chips
- Add dried fruit chunks
- Add shredded coconut
WHAT DO PISTACHIO PUDDING COOKIES TASTE LIKE?

HOW LONG DOES IT KEEP FOR?
Pistachio Pudding Cookies can be stored in an airtight container at room temperature for up to 5-7 days. For longer storage, they can be kept in the refrigerator for up to 2 weeks or frozen for up to 3 months. I freeze mine and just thaw it out for an hour on the counter before eating! They have never lasted more than a week in my household!

Pistachio Pudding Cookies
Ingredients
- 1 1/2 Cup All Purpose Flour
- 1/2 Cup Unsalted Butter softened
- 1 Egg
- 3/4 Cup White Sugar
- 1/4 Cup Brown Sugar
- 1 Instant Pistachio Pudding Mix 99g
- 1 tsp Baking Soda
- 1/4 tsp Salt
- 1 tsp Vanilla Extract
Instructions
- Preheat your oven to 350F and prepare a baking tray with parchment paper.
- In a large mixing bowl, add in your softened butter, white and brown sugar, vanilla extract and egg and mix together.
- Once the butter, egg, vanilla extract and sugars are creamed together, add in all your dry ingredients. Combine together until dough is formed.
- Roll your cookies into balls and lay on baking sheet 2 inches apart.
- Bake cookies for 10-14 minutes or until the edges are browned.
- Cool, serve and enjoy!
