The equipment you need to make this delicious fresh pineapple pico is a citrus juicer for the limes, glass bowls to mix everything up, a cutting board as you’ll need to do some serious produce dicing, and a good knife! Depending on if you’ll be serving this to guests or not, you can also place your pineapple pico in a nice chip and dip bowl!

You can keep it in the fridge for one evening to enjoy for lunch the following day but I would advise that it doesn’t stay in the fridge longer than that. The vegetables will turn soggy fairly quickly and all the juices from the tomatoes and pineapples will come out.
INSPIRATIONS FOR THIS RECIPE?
Nothing specific but fresh foods are my favorite things to eat EVER. I seriously go through a phase where all I want to eat is fresh pico de gallo, salsa, guacamole, or ceviche! I thought about pineapple pico de gallo and thought it would be super refreshing with some crunchy tomatoes, jalapenos, red onions, and sweet pineapples, and boy, was I right!
ANY OTHER NOTES?
One note that I want to make is that the juices come out from the produce fairly quickly as salt is added so if you’re wanting to minimize the juice, you may want to strain it and leave the tomato seeds out!

- 1 Jalapeno diced
