You know what… I’ve never even thought about making stuffed chicken until now and I’m just kicking myself about not thinking about it sooner! I’ve bought stuffed chicken breasts from Costco and thought it lacked flavour so that may be why but I’m obsessed with this delicious cheesy and creamy mushroom spinach stuffed chicken!

WHERE CAN I FIND THESE INGREDIENTS?
You only need a few ingredients for this recipe which of course are my favourite recipes to share! You’ll need some cream cheese which you can find in the dairy section, spinach and mushroom which you can find in the product section, and chicken breast which you can find in the meat section! Aside from that, you can always use your own seasonings or whatever you have at home but I just use 3 seasonings to keep it simple! I use seasoning salt, onion powder and garlic powder which you can find in the pantry or seasonings aisle.
WHAT ARE THE INGREDIENTS?
The ingredients to make this delicious mushroom spinach stuffed chicken are:
- Chicken Breast
- Cream Cheese
- Spinach
- Mushrooms
- Provolone Cheese
- Garlic Powder
- Onion Powder
- Seasoning Salt
WHAT EQUIPMENT DO I NEED?
One chore that I do not love is washing dishes so the less dishes the better and this recipe definitely is a less mess recipe! All you’ll need is a baking tray, parchment paper, knives, cutting board, a small sauce pot, and just general kitchen utensils!
You hopefully have everything that you need already but here are some of my favorite Amazon kitchen equipment!
CAN I SUBSTITUTE/ADD ANYTHING OUT?
This recipe is so simple but yes! You can of course substitute or add anything that you’d like to make this recipe your own! Here are some fun ideas to spruce up this recipe!
- Adding some fresh garlic and onions
- Adding some basil or fresh herbs
- Adding some pesto
- Subbing cottage cheese instead of cream cheese
- Adding more veggies like kale, tomatoes or artichokes
- Adding some bacon or ham
- Using different cheeses like fresh mozzarella, swiss or parmesan
- Use chicken thighs instead of chicken breast
WHAT DOES MUSHROOM SPINACH STUFFED CHICKEN TASTE LIKE?
This baked chicken recipe is so delicious! The cream cheese makes it so rich and decadent while the spinach and mushrooms give it an earthy taste that balances everything out! The chicken breast is meaty and soaks up all the flavours so well! The melted cheese on top ties everything together and gives it that extra cheesy goodness!
HOW LONG DOES IT KEEP FOR?
This recipe is great for meal prep! Chicken breast is a bit tough to work with sometimes as it tends to dry out really fast however, since it has cream cheese, it stays pretty moist! i prefer this fresh or just keeping it for the next day however, it does keep very well in an airtight container for 4 days.
INSPIRATIONS FOR THIS RECIPE?
The last time I had a stuffed chicken breast, I got it from Costco and to be completely honest, I did not like it at all. It was flavourless and just didn’t feel like it was worth my money! I thought about having some kind of cream cheese dish with chicken and it popped in my head that I should try and make a stuffed chicken breast and it turned out so good! I’ve made this twice this month 🙂

Mushroom Spinach Stuffed Chicken
Ingredients
- 2 Chicken Breasts
- 1/2 Block Cream Cheese softened
- 1 Cup Spinach chopped
- 1 Cup Mushrooms chopped
- 2 Slices Provolone
- 1/2 tsp Garlic Powder
- 1/2 tsp Onion Powder
- 1/4 tsp Pepper or to taste
- 1/2 tsp Salt/Seasoning Salt or to taste
Instructions
- Preheat your oven to 350F and prepare a baking tray lined with parchment paper.
- On medium heat, in a small sauce pot, add in your cream cheese, spinach, mushrooms, garlic powder, onion powder, pepper, salt and mix together until well combined. Just until the cream cheese is heated and the spinach and mushrooms have cooked down a little bit. – about 3-5 minutes then set aside.
- In your baking tray, place your chicken breasts and add some salt and pepper to the tops then slice down the middle. Add in the spinach and mushroom mix into the chicken and fold. It is okay if it spills out a little bit!
- Place a provolone slice on top and bake at 350F for about 30-35 minutes or until the cheese is golden brown and the chicken has reached an internal temperature of 165F.
- Serve with rice, pasta and/or salad and enjoy!
