Hi everyone, we are The Grumpy Olive – a sisterly trio from Italy, currently living in London, UK. We are so delighted to be writing for Lynn as we absolutely adore her blog and have never missed a post of hers since the end of 2020, so it is an incredible opportunity to be able to share with her audience some of our cooking this week.
We couldn’t avoid but to bake, of course, and we have come up with a quick recipe for some matcha butter cookies. We have loved matcha for way too long around here, but let’s go in order as not everyone might know about it. If you do, just skip through to the recipe and start baking away!

What is Matcha?
Matcha is a type of green tea, ground to powder, and traditionally it’s consumed in Asia. It comes with a very traditional Japanese way of preparing it and serving it, so we highly recommend reading more about it as it’s not only fascinating but also eye-opening on different cultures and habits, a bit like Italians and coffee or English people and tea for example.
We got very into matcha back when we were working in the hospitality industry here in London, and discovered that matcha seems to have a whole load of good things in it: first of all, it’s rich in antioxidants and studies have claimed for it to be a source of protection against heart disease and cancer. And if that wasn’t enough in your books, it’s also a great way to boost your metabolism and it’s said to be a great help in losing weight.
What does Matcha taste like?
But taste-wise, it’s very difficult to describe, and can be hard to like it, a bit like Marmite in a way: you either love it or you hate it, no in-betweens. It’s a very fishy, seaweedy kind of taste in our opinion, and we like it in the form of a matcha latte usually (or even in baking, like with this Matcha Sponge we have made before).
It is also high in caffeine – so make sure you don’t drink it as your bedtime treat! We love it in summer & winter, over ice & milk or with steamed hot milk. It’s a versatile drink for us, but very not-traditional at all with milk. But like all good things, it has to be consumed in moderation.

But back to our recipe we go, as we have gone a bit too far with this very short explanation on matcha tea.
These Matcha Butter Cookies were made one afternoon while we were clearing out some cupboards, as we tend to be hoarders – and who has not been cleaning cupboards during lockdown anyway?!
As a result, we have plenty of matcha to use up and we love experimenting in both cooking and baking using different ingredients, so we decided to try out some sort of buttery shortbread kind of cookies, and they were a hit (of course).
Here is how to make Matcha Butter Cookies:
Matcha Butter Cookies
Equipment
- Oven
Ingredients
- 1 1/2 Cups Flour
- 2 1/2 Tbsp Matcha Tea
- 3/4 Cup Unsalted Butter
- 3/4 Cup Sugar
- 1/2 Tsp Salt
- 1 Egg
- Icing Sugar to dust
Instructions
- Differently from other recipes, no oven to turn on to start with. Instead, prep all your ingredients so that you have them on hand before you start mixing.
- In a small bowl, sift your flour and matcha so that there are no lumps and set aside.
- In the bowl of your standing mixer beat the sugar and butter on medium speed until it becomes creamy and lighter in colour, then add the egg and let it mix in properly until everything is fully incorporated.
- Now lower the speed of the standing mixer and gradually add the flour and matcha mix until just combined. The dough will be firm and not very smooth.
- You can now move the dough in the fridge and let it rest for 10 minutes. In the meantime, turn on the oven to 180°C (350°F) and line two large baking trays with parchment paper.
- When the dough has rested for 10 minutes, you can roll in quickly into a cookie press gun and insert the disc of your choice – we went for flower shape as we thought they would look cute. Just press every single cookie on the parchment paper, making sure there is a 2cm space between each cookie.
- If you do not own a cookie press gun, you can either pipe the cookies using a large pastry bag with a large open-star tip, or you can also simply roll them into 1.5cm balls. Maintain the same distance so they do not stick together while baking.
- Bake them for roughly 10 minutes, or until the top of the cookies are firm and still far from browning. Transfer to a cooling rack and let them cool completely.
- Once the matcha butter cookies have cooled completely, dust them with some icing sugar – you can mix the icing sugar with some matcha powder as well if you want the matcha flavour to come through stronger.
These will keep for up to one week in an airtight container, as long as you keep them in a cool dry place.
The matcha butter cookies look absolutely adorable, and they will be a great addition if you end up serving a high-end tea of sorts (you never know, lockdown boredom!) or if you are more the kind of person who is sending care packages around to family and friends.
If you are not a convert of matcha tea yet – let me just add a few fun facts about it and make sure you’ll love it by the end of this post:
- Matcha is 137 times more powerful than your regular cup of tea;
- Matcha can help make you happy, all thanks to the L-Theanine amino acid that promotes a state of relaxation and well-being;
- Matcha is versatile and can be used as a seasoning to sprinkle on veggies, it can be mixed with yoghurt or blended in a smoothie, but also added to ice cream;
- Matcha is full of tradition, and the method to make it it’s quite eclectic too – whisk a couple of teaspoons of powder into a bowl or cup, add hot water (just under a boil) and then stir it with a bamboo whisk until it’s frothy, but if you’re like us, you can add milk instead of water.

You had me at matcha! I first tried matcha in Beijing at a Dunkin Donuts, because they had matcha flavored donuts. The combination of the earthy matcha and sweet pastry was so tasty. I can only imagine how good these matcha cookies taste.

Interesting idea!! have not yet tried matcha, for all the taste apprehensions and concerns you mentioned in the post. But I have heard that sweetening it helps, so the idea of putting it in cookies makes sense. And I love cookies! Just might have to try this. Maybe some sweet vanilla or sweet cinnamon matcha.
