CAN I SUBSTITUTE/ADD ANYTHING OUT?
You sure can! I love creating recipes as a guide but always encourage everyone to add/substitute/remove what they don’t like. This dish would do great with some vegetables like bell peppers, kale, mushrooms, broccoli, or edamame!
You can also use any protein with this. The marinade for this is a nice sweet soy pineapple sauce so it would go great with beef, pork, fish, shrimp, or tofu! You can also swap the chicken thighs for any chicken meat you prefer! Boneless, skinless chicken breasts work great too!
If you’d like to add a spicy kick, you can add in some red pepper flakes or hot sauce!

So, I was one of those people who thought that pineapple does not belong on pizza! My family loved ham and pineapple pizza but I truly didn’t. I did not like the texture of cooked pineapple before. Throughout the year, my family continued to love ham and pineapple pizza, and honestly, if you can’t beat them, join them haha!
The cooked pineapple just ended up growing on me and when I would order Thai food, I would get to eat some dish with pineapples so I learned to put them in my cooking! I’ve added pineapple in a lot of my dishes now like my Pineapple Coconut Chicken and will continue to!

Hawaiian Chicken Sheet Pan Dinner
Ingredients
- 6-8 Chicken Thighs boneless, skinless, cut in bite-sized pieces
- 1 1/2 Cup Pineapple fresh, sliced in chunks
- 1/2 Sweet Onion sliced in chunks
- 3 Tbsp Soy Sauce
- 1 Tbsp Ketchup
- 1 Tbsp Brown Sugar
- 1/4 Cup Pineapple Juice
- 1 tsp Garlic Powder
- 1 tsp Paprika
- 1 tsp Rice Vinegar
- Pepper as much as you'd like <3
Instructions
- Preheat your oven to 400F and prepare a sheet pan to use.
- On your sheet pan, add your chicken thighs, pineapple, and onion.
- In a separate small bowl, whisk together your soy sauce, ketchup, pineapple juice, brown sugar, garlic powder, paprika, rice vinegar and pepper.
- Pour the sauce mixture in the sheet pan along with the chicken, pineapple, and onion and mix together until everything is fully coated in the sauce and evenly spread on the pan.
- Bake in the oven for 30 minutes or until the chicken reaches an internal temperature of 165F!
- Serve over a bed of hot white rice and enjoy!
