Spring is just around the corner! Yay! This means brighter and longer days and I’m loving the natural light shining through my house daily. Spring also means snacking on mini eggs all day so you can see why I’m so happy! Today, we’re doing a super quick and simple little easter themed baked treat!

WHERE CAN I FIND THESE INGREDIENTS?
Okay, if you’ve been a reader of the blog for a while, you may know that I’m *not* the best baker. It’s a skill that I am continuing to learn to master but it’s definitely a skill I have now. For that reason, I use the sugar cookie premade mix from the baking section which just has me adding oil and eggs to the dry batter. Of course, it’s not mini egg cookies without the mini eggs so mini eggs from the chocolate or holiday section and optional but a few chocolate chips to melt if you’re wanting the mini eggs to stay in the middle!
WHAT ARE THE INGREDIENTS?
The ingredients to make these cookies are:
- Premade Sugar Cookie mix (can be the chilled dough like Pillsbury™ Sugar Refrigerated Cookie Dough or dry mix that you put together from the baking section)
- If using Betty Crocker™ Sugar Cookie Mix, you’ll need:
- 1 Egg
- 1/2 Cup of Melted Butter
- If using Betty Crocker™ Sugar Cookie Mix, you’ll need:
- Cadbury Mini Eggs
- Melted Chocolate (to keep the mini eggs from falling off in the center)
WHAT EQUIPMENT DO I NEED?
The equipment to make these cookies are very minimal! You’ll need to bake these cookies of course which requires your oven and baking trays. I love baking trays that also come with a cooling rack! You’ll also need some spatulas and optional but since I purchased these cookie scoopers, the game has changed! I love using these to make treats and even meatballs as they all come out the same and perfect size.
CAN I SUBSTITUTE/ADD ANYTHING OUT?
Of course, you can substitute anything from this recipe! If sugar cookies aren’t your thing or are not available to you, you can use any cookie dough that you love. Chocolate chip or peanut butter cookies would be very yummy in this as well!
You can also decorate the cookies as much as you want. I’ve seen people put frosting in the middle and then sit the mini eggs on top or decorate the edges of the cookie with some brown icing to look like twigs in a bird’s nest or even add some green icing for grass!
WHAT DO EASTER MINI EGG COOKIES TASTE LIKE?
These cute easter mini egg cookies are so yummy! When it’s just for me, I don’t do anything to hold the mini eggs in place so I basically, eat the mini eggs first then dip the cookie in milk! It’s your standard sweet treat with regular sugar cookies and mini egg chocolates. I like to think of them as an easy Easter treat that anyone can make! They are super cute if you’re looking to bring a treat to a spring or Easter gathering and need to whip up something quick and easy!
HOW LONG DOES IT KEEP FOR?
These cookies keep for a long time! I always freeze my baked goods since I’m the only one in my house with a sweet tooth. They are good for 5 days at room temp on the counter in a dry, air-tight container and up to 1 month in the freezer!
INSPIRATIONS FOR THIS RECIPE?
No specific inspirations from this recipe! I wanted to make something super easy to enjoy that looks really cute and pretty! I baked these up and gave them to some people and they loved it! So cute and simple.
ANY OTHER NOTES?
Again, if you want the mini eggs to stay in place in the middle, you will need to have some kind of frosting or melted chocolate to hold them! If you’re just enjoying them at home then it is not needed but if you’re bringing them somewhere, I highly suggest potentially melting a small handful of chocolate chips and putting a tablespoon of it in the middle then placing your mini eggs on top!
Easter Mini Egg Cookies
Ingredients
- 1 Betty Crocker™ Sugar Cookie Mix or premade chilled dough
- 1 Egg
- 1/2 Cup Softened Butter
- 1/2 Cup Mini Eggs
- 1/4 Cup Melted Chocolate optional
Instructions
If using sugar cookie mix, follow the recipe as per the package. For this recipe, I used Betty Crocker™ Sugar Cookie Mix which calls for:
- Preheat your oven to 350F and prepare a baking tray with parchment lined paper.
- In a large bowl, add in your sugar cookie mix, egg, butter and combine together until a ball of dough forms.
- Portion out each cookie dough into similar size balls using a cookie scooper or just with your hands, place each cookie on parchment paper about 1 1/2 – 2 inches apart.
- Use a spoon or cookie scooper to create a dent in the middle then place in the oven to bake for 10-12 minutes or until the cookies have golden edges/bottom.
- Once cookies are done, use spoon/cookie scooper again to press a dent in the middle and let cool. Add your mini eggs on top either just by itself or place with melted chocolate first to hold.
- Serve with a glass of milk and enjoy!
If using premade sugar cookie dough from the grocery store:
- Preheat your oven to 350F and prepare a baking tray with parchment lined paper.
