The equipment needed for this recipe is super simple and you most likely already have it at home! You’ll need a cutting board and knife to roughly chop up the produce. A citrus squeezer is the easiest but you can also just squeeze the lime juice out with your hands. Last but not least, a small sauce pot and a cooking utensil!

CAN I SUBSTITUTE/ADD ANYTHING OUT?
You sure can! I always encourage people to exercise their creativity when cooking. This recipe is super easy and that’s why I love it so much! The star of the dish is coconut milk so I would definitely not recommend substituting this at all. I love lime so I use a whole lime every time but you can also just use half and it would just be as good! Lime can definitely overpower a dish so it’s okay to put a little bit or taste as you go!
Since this dish is super simple, you may want to add some veggies to bulk it up. Asian produce like bok choy or Chinese cabbage are great options! Alternatively, any vegetables you like could be added in this or just eaten on the side and cooked separately.
For protein, I love this with shrimp however, I’ve done chicken loads of times and it is just as good! I’m sure any protein should be delicious with this creamy coconut sauce!
As for the fish sauce, I totally know it’s not everyone’s jam but I highly recommend trying this out! If you do not like it, you can use a little bit of soy sauce instead!

INSPIRATIONS FOR THIS RECIPE?
When I was a teenager, I worked in a food court and there was a fast food chain called Thai Express (which still exists today, well at least in Canada). Everyone who worked with me would splurge on getting Thai Express once a week instead of eating homemade lunches and would get very popular dishes like Thai Fried Rice or Pad Thai.
I’ve always had an adventurous palate and would want to try other things so I looked at the menu one day and decided I wanted to try Coconut Lime Chicken and boy, was it my favorite thing ever! This recipe definitely doesn’t compare to it but it was that day that I discovered that I love the combo of coconut milk and lime together!
After that, I knew I wanted to incorporate this flavour combo and it’s been a hit in my household since!

Creamy Coconut Lime Shrimp
Ingredients
- 1 Package Shrimp about 400-500g, peeled, cleaned and dried
- 1 Can Coconut Milk 400g
- 1 Lime squeezed
- 1 Tbsp Fish Sauce
- 2-3 Cloves Garlic minced
- 1/4 Sweet Onion roughly chopped
- 3 Green Onions roughly chopped
- 1 Tbsp Olive Oil
Instructions
- In a small saucepan on medium-high heat, add in your olive oil.
- Next, add in your onion and garlic and saute for 1 minute.
- Once your onion and garlic is fragrant, add in your shrimp and cook for 2 minutes.
- Squeeze in your lime juice, add in your fish sauce, and dump your can of coconut milk in the sauce pot.
- Let simmer for 3-5 minutes then lastly add in your green onions.
- Prepare a bed of white rice, pour creamy coconut lime shrimp on top and enjoy!
