I feel like everyone is catching on to the ube craze lately! Ube is a flavour that has come to be loved all over the world and I love it! I personally love all things ube and never fail to pick up ube flavoured treats whenever I’m at my local Filipino store!

HERE IS HOW TO MAKE COCONUT UBE COOKIES:
WHERE CAN I FIND THESE INGREDIENTS?
I used my favorite cookie base that I pretty much use for all my cookies! I don’t like super sweet desserts so I created a chocolate chip cookie recipe that is perfect for the level of sweetness I enjoy. I pretty much use this recipe for everything and just change it up depending on what cookies I want to make!
This is a pretty standard cookie recipe so the only things that may be “harder” to find may be the coconut extract, shredded coconut and ube extract. For the most part, coconut extract and shredded coconut can be found most grocery stores so that shouldn’t be too hard but the ube extract may be the hardest to find as I often have troubles finding it too! It always seems to be sold out too so if you do get your hands on it, be sure to pick up two like me! Ube extract is commonly found in Asian specialty grocery stores!
WHAT ARE THE INGREDIENTS?
The ingredients to make these yummy coconut ube cookies are:
- All Purpose Flour
- Baking Soda
- Salt
- Brown Sugar
- White Sugar
- Eggs
- Unsalted Butter
- Ube Extract
- Coconut Extract
- Shredded Coconut
WHAT EQUIPMENT DO I NEED?
If you already bake cookies, you really don’t need anything other than your general baking equipment! I don’t even use a mixer, I just mix everything in a bowl with a spatula. One tool that has been life changing is my cookie scoops! I love that all my cookies come out the same size and I don’t need to weight them out or anything.

CAN I SUBSTITUTE/ADD ANYTHING OUT?
Of course! This recipe is the base for pretty much all my cookies and I just change it up! I really love cookies that are more cakey and light so if you love cookies like that too, this recipe will be your go-to for life!
Here are some ideas to change up this recipe!
- Add some white chocolate chips
- Add sprinkles
- Add cream cheese balls
- Add mini marshmallows
- Add dried fruits or nuts
- Top with powdered sugar
- Dip in melted chocolate
WHAT DO COCONUT UBE COOKIES TASTE LIKE?
I honestly don’t even know how to explain what ube tastes like but I Googled it for us haha and it says it’s subtly sweet, nutty, and has hints of vanilla! You’ll only truly know what it tastes like once you try it but ube and coconut is such an elite flavour combo! I am a Filipina and ube is so popular in the Philippines and is often used in so many desserts!
This cookie is buttery, subtly sweet, coconutty and vanilla-y! It has a slightly crunch, it’s light in the middle and also soft! Ugh, perfect. My mouth is watering typing all this out!
HOW LONG DOES IT KEEP FOR?
Ooh, these cookies are perfect and keep for a long time! I usually like making a batch of cookies then baking some fresh and storing the other half for a later date in the freezer! You can have fresh cookies at any time! I keep my cookies on the counter at room temperature for up to 7 days but they never last that long haha.
I often keep my frozen cookie dough for up to a month and a half! Store in an air-tight container so they don’t get freezer burn and they last even longer!
INSPIRATIONS FOR THIS RECIPE?
Honestly, I was truly just craving ube cookies and thought to make some and share a recipe haha. I love all things ube and am a sucker for them so I see ube desserts in store, I always get them! I’ll be baking these again soon for my family as I know that they will eat these up within minutes!

Coconut Ube Cookies
Ingredients
- 2 Cups All Purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1 Cup Brown Sugar
- 1/4 Cup White Sugar
- 2 Eggs
- 1/2 Cup Unsalted Butter melted
- 2 tsp Ube Extract
- 1 tsp Coconut Extract
- 1/2 Cup Shredded Coconut or as much as you'd like <3
Instructions
- Preheat your oven to 350F and line a baking sheet with parchment paper.
- In a large mixing bowl, add in your melted butter, brown and white sugar, ube & coconut extract and eggs. Whisk together until well combined.
- In a separate bowl, combine your baking soda, salt and, flour then pour in your wet ingredients bowl in and mix all together.
- Scoop out cookie dough into even 2 inch balls and roll into the shredded coconut. Place on baking tray, spaced 2 inches apart.
- Bake for 12-15 minutes or until golden brown on the bottom.
- Transfer to a cooling tray, cool, serve and enjoy!
