WHAT EQUIPMENT DO I NEED?
All you’ll really need for this recipe is some baking basics which you hopefully already have at home! You’ll want some measuring spoons/cups, a large mixing bowl and spatula so that you can mix everything together and a greased baking dish to bake the bread in! If you have an electric or stand mixer, you can definitely go ahead and use that but I don’t think it’s necessary! I just mix by hand and use a spatula.

CAN I SUBSTITUTE/ADD ANYTHING OUT?
This recipe is quite basic so if you’re looking to substitute some ingredients then it may not be the same! I’m not a professional baker so I wouldn’t be able to tell you what would be the perfect substitute but get creative as you want with this and add what you need!
Some awesome things you can add to this pudding bread would be some dried fruits, nuts, chocolate chips, and/or sprinkles! I didn’t create a syrup or glaze to go on top of this but you can create a coconut milk glaze with some coconut milk and icing sugar or maybe any icing you’d like!

I’m never been super baking savvy so I was always quite shy to test out new recipes. I first created my pistachio pudding bread recipe and it was the first baked good where I just felt super confident. After creating the pistachio pudding bread, I thought of testing out other pudding mixes and was not disappointed!
Pudding bread is now my go-to not-so-sweet treat to bake all the time!

Coconut Pudding Bread
Ingredients
- 1 1/2 Cup All Purpose Flour
- 2 Large Eggs
- 1/2 Cup Unsalted Butter melted
- 1/4 tsp Salt
- 1 tsp Baking Powder
- 3/4 Cup White Sugar
- 2/3 Cup 2% Milk
- 1 Package Coconut Pudding Mix 113 g
- 1/2 Cup Shredded Coconut dried or fresh
Instructions
- Preheat your oven to 350F and prepare a greased (oil or butter) loaf pan.
- In a large mixing bowl, add your sugar, eggs, and butter and mix well together.
- Next, add in your milk, coconut pudding mix, baking powder, and salt and mix together again.
- Lastly, slowly add in your flour and fold the batter one last time. Once everything is mixed well and there are no clumps of flour, fold in your shredded coconut. Pour the batter into the loaf pan.
- Bake in the oven for 45-55 minutes or until when you poke a toothpick in the middle of the loaf, it comes out clean!
- Let cool, serve, and enjoy!
