Who has eaten their weight in Easter candy? I know I have! Cadbury Mini Eggs have a special place in my heart and tummy every year.
I love thinking about Easter as it just reminds me that we’re closer to brighter and longer days and that makes me happy. Although, I love fall and winter, it’s nice to have a change in season. They always feel like fresh quarter starts.
I’ve spent the better part of the month trying to think of what kind of Easter inspired recipe to share and I came across this Easy blondie recipe on Pinterest from Kylee Cooks! They are super easy and looked great!
I used to have a big sweet tooth when I was younger but as the years go by, I feel more sensitive to sugar. I often feel like if something is too sweet, I can’t have it or can only have a bite! I think I’ve adapted to be a more savoury person.
As it is Easter, I of course wanted to make a treat so I tried these out and added some mini eggs. I did lessen the sugar on this recipe though but feel feel to follow the original recipe!

My husband doesn’t appreciate sweets either so every time I do a sweet treat, I often store it in the freezer and heat it up again when I want it or give them away to friends and family.
HERE IS HOW TO MAKE Cadbury Mini Egg Blondies:
WHERE CAN I FIND THESE INGREDIENTS?
Luckily, all of these ingredients are available at your local stores. If you can’t find Cadbury Mini Eggs, you can grab them off Amazon. I had most of these ingredients in my pantry aside form the butter which I had to buy anyways.
WHAT ARE THE INGREDIENTS?
- Unsalted Butter
- Brown Sugar
- Eggs
- Vanilla Extract
- All Purpose Flour
- Baking Powder
- Salt
- Cadbury Mini Eggs
CAN I SUB ANYTHING OUT?
I wouldn’t for this one as it’s so simple and perfect as it is! I’m sure you can sub ingredients to make this vegan but unfortunately I’m not that great of a baker to know what would be appropriate and would keep still its texture.
WHAT DOES IT TASTE LIKE?
This tastes like your day is complete and your problems are solved. Totally kidding!! In my opinion, blondies taste like a chocolate chip cookie without the chocolate chips which I love because I love like desserts with an excessive amount of chocolate chips. I do prefer it without the extra 1/4 of sugar and for me, its already super sweet! If you can handle the sugar, you can make it 2 cups instead of 1 + 3/4 of brown sugar.

Cadbury Mini Eggs Blondies
Equipment
- Oven
Ingredients
- 1 Cup Unsalted Melted Butter
- 1 + 3/4 Cups Packed Brown Sugar Either gold or dark is fine
- 2 Eggs
- 2 Tsp Vanilla Extract
- 1 + 3/4 All Purpose Flour
- 1/2 Tsp Baking Powder
- 1/2 Tsp Salt
- 1 Bag Cadbury Mini Eggs Small bag I used was 200g
Instructions
- Preheat oven to 350 F and line a 9×9 baking pan with butter or parchment paper.
- In a large bowl, add in your eggs and vanilla. Mix until well combined.
- Next, add in your melted unsalted butter and brown sugar. Mix until well combined.
- Add your flour, baking powder and salt to your large bowl and stir until everything is properly incorporated.
- Lastly, slight crush your Cadbury Mini Eggs and add into the mixture. Do not over mix! Leave a little to sprinkle on top.
- Pour the batter into your baking pan and bake for 30-40 minutes or until the edges are golden brown and the middle is fully cooked.
- Allow 15 minutes to cool, cut and serve.
Notes
- To slightly crush the mini eggs, I just put it in a Ziploc and hit it a few times with a rolling pin
- You can use salted butter if you’d like depending on your taste buds.
- Allow it to fully cool to better preserve their shape
- You can freeze these up to a month and a half and heat it up in the oven on low heat for 5-10 minutes.
Despite being raised in a Catholic household, I actually don’t know much about Easter. All I know is that we get the extra day off and we don’t eat meat on Good Friday. I searched up more on Easter and here are

Those look great! I love the pretty little bursts of pastel colors you get from the eggs. I’m also getting to a point where a lot of sweets are just too rich for me. Cadbury Mini Eggs are my absolute favorite! I could literally eat a bag of them per day, lol. This recipe sounds so delicious and perfect for Easter. I will try and make it if I can get a bag of Mini Eggs to last long enough! Great post, as always!
