CAN I SUBSTITUTE/ADD ANYTHING OUT?
Listen, I generally say yes to adding or substituting anything from any of my recipes however, I have to say that I’m not a confident enough baker to tell you what would be good to substitute and still leave you with a yummy loaf!
I will say though, if you do have dietary restrictions, there are tons of information online on what are good substitutions for ingredients!
You are welcome to add a few toppings if you’d like! Some delicious additions to either add on top or in the mixture would be some chocolate chips or nuts! If you want to do a little glaze as well, you can do some icing/powdered sugar and milk and just mix that together and pour it on top!

HOW LONG DOES IT KEEP FOR?
Blackberry Lemon Loaf typically lasts for 3-4 days when stored in an airtight container in the refrigerator. My husband doesn’t have a huge sweet tooth so sometimes when I bake, it just ends up being me that eats it. I like to store the rest in the freezer then when I want to enjoy one, just pop it in the fridge to thaw a little bit and either eat it chilled or warm it up in the microwave for a few seconds.
INSPIRATIONS FOR THIS RECIPE?
Blackberries are starting to be in season again and when I saw a huge container at Costco looking so juicy and sweet, I knew I wanted to eat some AND bake with it. I really love lemon desserts and my lemon pudding bread recipe and thought it would be a fantastic flavour combination!
I truly enjoyed this loaf so much! Lemon and blackberries go so well together! I think I’ll have to try and make a blackberry lemonade as well for the summer!
ANY OTHER NOTES?
Yes! For more blackberry flavour throughout the whole loaf, it would be best to smash the blackberries up prior to adding them into the loaf mix. I do a mix of smash blackberries and just full size ones throughout the mix. Also, leave a few to place some on top! They do not fall down to the bottom of the loaf pan and looks beautiful when the loaf is sliced!
Blackberry Lemon Loaf
Ingredients
- 1 1/2 Cup All Purpose Flour
- 2 Large Eggs
- 1/2 Cup Unsalted Butter melted
- 1/4 tsp Salt
- 1/4 tsp Baking Powder
- 3/4 Cup White Sugar
- 2/3 Cup 2% Milk
- 1 Package Instant Jell-O Lemon Pudding Mix 99g
- 1 Cup Blackberries some smashed, some whole! leave some a few to add to top of loaf before baking
Instructions
- Preheat your oven to 350F and prepare a greased (oil or butter) loaf pan.
- In a large mixing bowl, add your sugar, eggs, and butter and mix well together.
- Next, add in your milk, lemon pudding mix, baking powder, and salt and mix together again.
- Lastly, slowly add in your flour and fold the batter then add in your smashed and whole blackberries to fold in one last time. Pour into your loaf pan and add a few remaining blackberries on top.
- Once everything is mixed well and there are no clumps of flour, bake in the oven for 1 hour to 1 hour and 15 minutes minutes or until when you poke a toothpick in the middle of the loaf, it comes out clean!
- Let cool, serve, and enjoy!
