Biscoff cookies are one of those treats that as soon as I have a chance to enjoy a cookie (or 5), I’m on cloud nine!
I recently went to a cafe that sold a biscoff cookie latte and I knew I needed to recreate it at home because there was no way I was driving into the city + paying $9 for a latte every day!
I played with this recipe a little bit and did what felt right to me. As always, I’m a firm believer in making coffee to your liking so use this as a guide and enjoy!

WHERE CAN I FIND THESE INGREDIENTS?
The ingredients for this biscoff oat cold brew can be found at any local grocery store! I use very little and basic ingredients! You can find the biscoff cookies and cinnamon in the pantry aisles and the oat milk of your choice in the refrigerated aisles! The only thing that may be harder to find would be the spiced brown sugar syrup BUT it is super easy to make at home.
WHAT ARE THE INGREDIENTS?
The list of ingredients for this biscoff oat cold brew are:
- Oat Milk (or any milk/dairy-free alternative of choice)
- Ground Cinnamon
- Brown Sugar Syrup (spice or not spiced, both are okay!)
- Biscoff Cookies (crushed)
WHAT EQUIPMENT DO I NEED?
For this recipe, you need very little equipment! As much as I love kitchen gadgets, I like to keep my things to a minimum so I just use my good ole’ mason jar and shake until it becomes a bit frothy. One thing that has been a game changer in my life though, would be my Takeya Patented Deluxe Cold Brew Maker! This is cold brew maker is so helpful! I used to just use a nut bag to strain my coffee but it would just get too messy.
I usually just buy biscoff cookies at the grocery store but you could also buy them online which is great! I usually buy my iced coffee syrups online from Buy Coffee Canada like this spiced brown sugar syrup!
CAN I SUBSTITUTE/ADD ANYTHING OUT?
You can most definitely substitute or add anything to this recipe! Like I always say, my recipes are a guide. You’re welcome to make this sweeter/less sweet or add whatever you’d like!
If you want to make the biscoff cookie taste a lot stronger, you can add in some melted cookie butter! If you want to make this a bit chocolatey, chocolate syrup would be great!
WHAT DOES BISCOFF OAT COLD BREW TASTE LIKE?
Biscoff cookies to me tastes like a faint buttery gingerbread cookie! I love that they are crunchy and thin cookies and always remind me of holiday flavours!
For me, I absolutely love oat milk so the creaminess of oat milk paired with the buttery, cinnamony gingerbread on top of a delicious iced cold brew coffee is the best treat coffee I could best at home!
HOW LONG DOES IT KEEP FOR?
This recipe definitely needs to be made the moment that you want to enjoy it as the cookie as all cookies will get soggy and clumpy! This recipe takes literally less than 5 minutes so it doesn’t dent your days. I advise you not to make this ahead of time unless you want to strain out the cookie and make a big batch for the week!
You can soak the cookie so that the oat milk gets infused with the flavours and then just strain it so you can use the mix for a week without the gross super old and soggy cookie!
INSPIRATIONS FOR THIS RECIPE?
The inspiration for this recipe is definitely from my love of biscoff and cookie butter! Cookie butter didn’t come to Canada until a bit later and was super popular in the US and Europe! I remember going to the US to get jars of cookie butter spread and being so sad that it wasn’t available where I live!
Fast forward, cookie butter/biscoff/speculoos is everywhere and in so many cafes and restaurants! I’m super happy to be able to easily get these products and will continue to make yummy recipes!

Biscoff Oat Cold Brew Coffee
Ingredients
- 3/4 Cup Oat Milk
- 1/2 Tsp Ground Cinnamon
- 2 Tbsp Brown Sugar Syrup
- 3-4 Crushed Biscoff Cookies
Instructions
- In a mason jar, add in all your ingredients.
- Shake until the milk has become a little bit frothy.
- Grab your glass and add in your ice and cold brew/coffee of choice.
- Pour the biscoff oat mixture on top.
- Serve and enjoy!
