Ever since I was little, I have always been obsessed with putting soy sauce on my boiled eggs! I used to think it was weird because no one I knew did it too but now it’s become increasingly popular and I’m stoked about it! Everyone I knew just added salt to their eggs but I was a soy sauce girl through and through.
Fast forward to the present, Korean Mayak eggs have been all over my social media feeds! I love a good Korean soy marinated egg with a bowl of rice or noodles any day but it dawned on me on how easy it would be to make Filipino-inspired ones too!

HERE IS HOW TO MAKE FILIPINO ADOBO INSPIRED SOY MARINATED EGGS:
WHERE CAN I FIND THESE INGREDIENTS?
The ingredients to make this delicious marinated egg dish can be found at most grocery stores! You can pick up the eggs from the dairy aisle, garlic from the produce section, and the rest of the ingredients in the pantry or Asian aisle! Most of these ingredients should be readily available however, I know not everyone in the world is able to find the same ingredients so get creative if not everything is available for sure!
WHAT ARE THE INGREDIENTS?
To make these delicious marinated eggs, you’ll need:
- Soy Sauce
- Dark Soy sauce
- Bay Leaves
- Minced Garlic Cloves
- Water
- Chopped Chillis
- Cracked Black Pepper
- White Vinegar
WHAT EQUIPMENT DO I NEED?
This recipe is super easy to make! All you’ll really need in terms of equipment is some measuring cups and a good leakproof/airtight container so the eggs can sit in the fridge and soak all the soy flavors!
CAN I SUBSTITUTE/ADD ANYTHING OUT?
The base of adobo is basically soy sauce, vinegar, and garlic so if you take any of these ingredients out, it won’t be Filipino adobo inspired however, I always encourage changing up my recipes to something you’d enjoy or getting creative with my recipes too!
You can add some sesame oil or chili oil. You can make it sweeter and substitute the white vinegar for rice vinegar. You can also add in some raw onions too!
WHAT DO FILIPINO ABODO-INSPIRED SOY MARINATED EGGS TASTE LIKE?
If cold Korean soy-marinated eggs and hot Filipino adobo had a baby, this would be it! It’s the perfect mix between the two. In the Korean version, you really taste the nutty sesame and sweet honey/sugar flavor which I love but in this version, it’s more tangy and very savory with the soy sauce and vinegar being the main stars.
I really enjoy this as well with a hot bowl of rice for a super quick and simple meal or with a bowl of noodles! YUM The perfect dish to keep in your fridge to enjoy during the week!
HOW LONG DOES IT KEEP FOR?
Boiled eggs are generally good for 7 days with the shell on but since we remove the shell off these eggs, these soy-marinated eggs are good for up to 4 days. Just be sure that the eggs are in a good airtight container for maximum freshness!
INSPIRATIONS FOR THIS RECIPE?
I LOVE soy sauce marinated eggs and I make them often. In Filipino adobo, some recipes include either small quail or regular chicken eggs and when I was making adobo one day, I thought this would be super yummy cold then I swear all over social media I saw people making Korean marinated eggs and it was the sign I needed!
I thought to myself why not make a Filipino adobo-inspired version of soy-marinated eggs? I quickly tried it out one day and was sold. I marinated it for 12 hours and cooked a fresh pot of rice and it was an amazing and satisfying meal!
ANY OTHER NOTES?
It is best to leave these eggs marinating in the fridge for minimally 8 hours but the longer, the better in my opinion! Don’t forget to scoop some of the yummy delicious soy sauce marinade onto your rice or noodles!
Filipino Adobo Inspired Soy Marinated Eggs
Ingredients
- 3/4 Cup Soy Sauce
- 1 Tbsp Dark Soy Sauce
- 2 Tbsp White Vinegar
- 2-3 Minced Garlic Cloves
- 2 Bay Leaves
- 1 Cup Water
- Crushed Black Pepper to taste
- Crushed Red Chillis to taste
- 8 Soft Boiled Eggs
Instructions
- In a large airtight container, add in your soy sauce, dark soy sauce, white vinegar, garlic cloves, bay leaves, black pepper, red chillis, and water. Stir until well combined.
- Peel and add in your eggs, cover, and let marinate in the fridge for minimally 8 hours.
- Serve over a bed of hot white rice or noodles and enjoy!
