Meatless Monday and Veganuary are big right now and I understand why! A lot of information has been coming out of the meat industry that is making people switch from a meat diet to a vegetarian or vegan diet.
I’m going to state out right now that I am NOT vegan or vegetarian and most likely never be but I do balance my meats and enjoy vegetarian and vegan meals often. I like having a good balance of nutrients in my body and that’s important to me instead of sticking to one lifestyle.
In the more recent months, I’ve been experimenting with a lot of vegetarian and vegan meals and at first, I admit that I wasn’t sure I could handle it but after some recipe testing, I now enjoy vegetarian and vegan food options.

I started eating more vegetarian and vegan as I was having skin and anxiety problems so I was trying to take things out of my diet like dairy, coffee, and to see what is a trigger for my acne.
My husband loves meat so I couldn’t take it fully out of our diet but I just decided to do vegetarian and vegan meals for myself for breakfast and lunch and just have what I prepare for my husband and I for dinner.
In the last few months, I have eaten a lot of chickpeas, cauliflower, tofu, mushrooms etc and I have been loving it! I wanted to create a post that included all my favourite vegan dinner meals and some meals that I will be trying very soon!

Buffalo Chickpea Salad Wraps
I HAD to put this at the beginning of the list! My favourite quick lunch. These wraps are spicy and creamy and the avocados tie it all together!
Vegan Gluten-free Teriyaki Cauliflower Wings
Yum! I love a good teriyaki sauce. Crunchy teriyaki wings are the best dinner entree with a side of hot white rice!
Healthy Baked Chickpea Balls
Similar to a falafel, these chickpea balls are perfect to have in a wrap or bowl! These chickpea balls are filling and super delicious and flavourful!
Creamy Vegan White Chickpea Chili
Chickpea Chili is amazing on a cool fall day. The crunch from the tortilla chips makes the best hearty meal! Perfect for meal prepping and storing in the freezer for later as well!
Sweet Potato Black Bean Quesadillas
I’ve said this time and time again but sweet potatoes are such an underrated ingredient! These sweet potato and black bean quesadillas are also “cheesy” but beware. you’ll be eating a bunch!
Sesame Tofu with Broccoli Recipe
Crunchy and saucy tofu on top of steamed broccoli?! Yes, please! I love anything with sesame oil and sesame seeds! Can’t go wrong with steamed broccoli! It’s my go-to vegetable and I always have a frozen bag of broccoli in my freezer in case I don’t have fresh vegetables!

Curry Ramen
Yum! I love good curry ramen. Such a flavourful dish and you have the opportunity to add vegetables you like! I lot curry ramen or laksa! My favs and so filling!
Mushroom Bourguignon Recipe
I LOVE mushrooms so this was a fav for me! I personally love the regular beef version of this so it’s awesome that there’s a super delicious vegan mushroom recipe!
Crispy Coconut Lime Baked Cauliflower Tacos
The panko-crusted cauliflower tacos are delicious and satisfy every craving you were having! It’s similar to fish tacos! Super crunchy outside and soft inside.

Yum! Fried rice is the ultimate comfort food and is so delicious! So many colorful ingredients into one fresh dish! A sweet and savoury dish. The fried rice is savoury and the little tidbits of pineapples give you the sweetest bites!

This post is informative and has great, creative ideas! I have no interest in actually going vegan, yet I do not eat much meat other than chicken so I am always looking for new meal ideas. Generally, I am simply not a fan of the taste of meat and I would love to cut my chicken consumption down too. I too am neither vegan or vegetarian, but I make many vegan and meatless recipes and I find what I love about them most is how creative the recipes are in combining flavors, textures, and sauces to create a balanced meal that still tastes great!

So many of these look so good! My skin was the reason I gave up dairy initially too, I was getting rashes on my cheeks and started keeping a food diary, and it was always big dairy days that triggered it, so I took vanity over cheese and went vegan. Unfortunately coconut causes the same issues so even vegan cheese is off the menu. The spicy kale bowl looks delicious! x
